Philosophy

TIMION (τίμιον, “tim’-ee-on”) is the Greek word for honest, sincere, trustworthy, upstanding, honored.

 

Our aim

Our aim is to provide products that uphold to the values of TIMION. We believe in ethical agriculture and we cultivate our land in an environmentally responsible way. We aim to prove that agriculture without the use of industrial chemicals for fertilization and pest control is not just possible, but necessary in order to break the vicious cycle of chemical input and soil degradation.

Our methods

The total absence of pesticides and herbicides, as well as the use of non-invasive farming methods, help maintain all the elements of the local flora, a factor we consider mainly responsible for our extra virgin olive oil’s rich flavor. At the same time, we aim at safeguarding the unique natural environment of the Laconic land for the future.

Our beliefs

We believe that certification according to the highest international standards is fundamental for all our production procedures, but it is our personal care that makes TIMION products special, along with the supervision of all stages of production: from the hand-picking of olives to the hand-bottling of TIMION extra virgin olive oil. We believe in sharing with you, the best of what Greek nature have to offer, as well as introducing to you and your loved ones the health benefits of the Mediterranean diet.

OUR LAND (36°57’26.48”N 22°33’04.78”E)

Our land, a privately owned traditional 300-acre olive grove, is the core of the TIMION brand. It is located at an altitude of 370m above sea level, on the hills overlooking the plain of Sparta.

 

The climate

The climate of the area is typically Mediterranean, warm, sunny and dry, with adequate rainfall, warm summers and mild winters. The soil in our grove drains well and retains sufficient moisture during the dry summer month

The grove

Olive trees have been cultivated in this part of the world, for so many centuries, that they have become inseparable from local culture, history and everyday life. As a result, we strive to produce top quality olive oil by treating olive trees as part of the grove’s ecosystem. As we farm towards a healthy, living soil, all fertilization methods are based upon organic principles while our every effort focuses on protecting the qualities of the natural soil as well as the properties of the local flora, responsible for the mixture of our extra virgin olive oil’s rich and flavors; lavender, oregano, thyme, savory, rosemary, sage, holly and arbutus. That’s what makes our olive oil so special. 

The olive oil

We take care of approximately 7.000 trees of the Koroneiki variety, famous for its vibrant, peppery and fruity taste, as well as its low acidity and polyphenol full olive oil content. The hand-picking and cold pressing of the olives is completed by mid-December. The extra virgin olive oil is then stored in cool stainless tanks in order to clear and go through sedimentation, until it is ready to be bottled. We fill all bottles ourselves, one by one, in order to ensure that each and every bottle gets the attention it deserves.

PRODUCTION PROCEDURE

Hand-picking the olives, is pivotal to avoid bruising which induces fermentation. Cold extraction at a state-of-the-art olive press within 8 hours of the olives’ harvest, is used to minimize oxidization and fermentation acidity. Storing takes place at our own controlled facilities. All procedures are certified for organic produce (EU 834/2007), and our products have received a Protected Geographical Indication status (PGI “Laconia”). We also maintain a food safety system certified according to ISO22000.

MEDITERRANEAN DIET

Traditional Mediterranean Diet is based on a diverse, plant-based menu consisted of fruits, vegetables, cereals, legumes, nuts and seeds. The basic ingredient though is olive oil.

 

Benefits

Research has shown that the traditional Mediterranean diet reduces the risk of heart disease. In fact, a recent analysis of more than 1.5 million healthy adults demonstrated that following a Mediterranean diet was associated with a reduced risk of overall and cardiovascular mortality, a reduced incidence of cancer and cancer mortality, and a reduced incidence of Parkinson's and Alzheimer's diseases. For this reason, most if not all major scientific organizations encourage healthy adults to adapt a style of eating like that of the Mediterranean diet for prevention of major chronic diseases.

Olive oil

Olive oil is the backbone of the Mediterranean Diet. The nutritional and therapeutic advantages of olive oil have been acknowledged by people of the Mediterranean area for centuries. Olive oil has been used for skin preservation, muscle stimulation, treatment for scratches and burns as well as the dehydration caused by the sun.

Good vs Bad fats

The focus of the Mediterranean Diet is against limiting the total fat consumption, but rather making wise choices about the types of fat one eats. The Mediterranean Diet discourages saturated fats and hydrogenated oils (trans fats), both of which contribute to heart disease and promotes extra virgin olive oil as the primary source of fat. Extra virgin olive oil provides monounsaturated fat, a type of fat that can help reduce bad cholesterol levels when used in place of saturated or trans fats.

Principles

The Mediterranean Diet emphasizes the following:

  • • Eating primarily plant-based foods, such as fruits and vegetables, whole grains, legumes and nuts
  • • Replacing butter with extra virgin olive oil
  • • Using herbs and spices instead of salt to flavor foods
  • • Limiting red meat to no more than a few times a month
  • • Eating fish and poultry at least twice a week
  • • Drinking red wine in moderation (optional)

It is also important to enjoy meals with family and friends and getting plenty of exercise.
